This past weekend I cooked dinner for a couple of good friends who happen to be vegan. Despite the fact that I house several vegan cookbooks in my stash of recipe collections, including The Real Food Daily Cookbook and How it all Vegan!, I wanted some fresh inspiration.

And as I've been doing quite often lately, I turned to Foodily (food, i love you - cute, right?). Have you heard of it? Simply put, it's a recipe searching and sharing site (imagine if Pinterest met Epicurious). I typed in the word "vegan" and after browsing through many scrumptious sounding results I narrowed it down and decided on my menu: Black Bean and Sweet Potato Tacos for the main course and Coconut Pineapple Vegan Banana Bread for dessert.

YUM. Both recipes were winners, as evidenced by the fact that both the vegans and non-vegans at the table were equally satisfied. The healthfully satisfying Black Bean Sweet Potato Tacos are destined to become a weeknight staple. In fact, the leftovers are sounding pretty good right about now, maybe topped with a fried egg???

That sounds delicious. Last night my husband and I cooked the Miso-Curry Delicata Squash recipe from Heidi Swanson's cookbook. It was awesome. A great vegan choice. Although we're not vegan, the recipes are so nutritious. We have vegan friends, so that book is a good resource.

ooooh i am bookmarking that coconut banana bread! i'm a vegan so i love when omnivores are exposed to how amazing non-meat and non-dairy food can be!
my husband use sweet potatoes weekly - mashed up in black bean tacos or sauteed in a stew with tomato and cauliflower.

On Sunday, among other things, I made the brie wrapped in puff pastry - what a hit it was.
The meal included arugula, turnip and prosciutto salad; roast beets with goat cheese and pistachio; rack of lamb with mustard thyme crust; etc. Like aspic, and this "greatest chocolate cake." We joked about how long the meal lasted: my mother called me two hours after my guests had arrived, thinking they would be gone; but where I live now, four hours is the minimum for such meals, which means that the menu can be quite ambitious.
This weekend I also blogged about my favourite winter recipes.
As for the vegan diet: where I live now, many are essentially vegans for about half of the year, when they observe the Eastern Christian fast days. It is said that combining these diets is very healthy, and reflects the proportion of molars to the rest of our teeth.
Ooh, I have to make those tacos! This whole menu sound delicious!
Funny - I was going to make the same recipe from 101cookbooks tonight that Jenny mentioned above. I've made it before and it's AWESOME. I second her recommendation.

We had company on Friday night and I wanted something simple but delicious, so I actually made the baked penne with roasted vegetable recipe that you recommended a few months back, with an arugula salad and grilled italian sausages on the side. Everyone loved it!
Super excited about the new site! I love going to the store without a list and just grabbing yummy looking ingredients. Later I discover I have no real plan for combining said ingredients.....foodily might be a game changer, thanks!
I made an open-face egg sandwich with mountain of arugula. A few hours ago, I had some cabbage rolls fried in butter. It doesn't look very appetizing but really tasty.
